Mexican Roll-ups, A Beef Recipe

A beef recipe can often make a cheap meal. Especially if that beef recipe is a casserole like my Mexican Roll-ups makes.

The recipe calls for shredded beef, which is a great way to use up that leftover roast from your Sunday dinner. I actually can stew meat and use it for this recipe, but ground beef would work as well.

What is in this wonderful beef recipe for large families? Mexican beef roll-ups with whole food ingrediants. Healthy and tasty!

Mexican Roll-ups: A Beef Recipe for Large Families

You will need:

  • 2 1/2 cups of shredded beef (or 1 1/2 pounds of hamburger, browned and drained)
  • 1 1/2 cups of sour cream
  • 3 tsp taco seasoning
  • 2 cups of mushroom sauce
  • 1 1/2 cups of shredded cheddar cheese.
  • 1 small onion chopped
  • 1/2 cup of salsa
  • 1/4 cup of sliced olives
  • 10 flour tortillas
  • Shredded lettuce and chopped tomatoes (optional)

In a bowl, combine the beef, 1/2 cup of the sour cream, 1 1/2 teaspoons of the taco seasoning, 1 cup of mushroom sauce, 1 cup of cheese, the onion, salsa and olives. Mix well and spread approximately 1/3 cup of the filling on each tortilla.

Mexican Beef Rollups: A cheap Meals beef recipe for large families

Roll tortillas up and place in a 9x13in glass baking pan. Mix remaining taco seasoning, mushroom sauce, and sour cream together. Spread these over the top of the tortillas.

Cover and bake at 350 for 30 minutes. Uncover, sprinkle remaining cheese over the top and bake for 10 more minutes.

Serve with optional tomatoes and lettuce.

This recipe will serve 8-10 people.

We fixed this all the time when I was growing up. It’s a delicious casserole with a Mexican taste to it that is simple to make.

Ingredients
