Pregnancy Recipe ~Healthy Cookies for You!

One thing about being pregnant, it seems like I’m always having to eat. My energy will be fine one minute and the next minute it’s gone. I needed a snack that I could have on hand, that would also be very nutritious.

Pregnancy recipe for cookies. Healthy and nutritious.

Pregnancy recipe for Cookies:

  • 1 cup roasted unsalted sunflower seeds
  • 1/2 cup rolled oats

Put sunflowers seeds and rolled oats into a chopper and chop for a minute or so until you have a slightly course mixture.

  • 1 1/12 cup whole wheat flour (fresh ground if possible)
  • 2 tablespoons wheat germ
  • 1 tablespoon ground flax seed
  • 1 tablespoon chia seeds
  • 1 teaspoon cinnamon
  • 1 1/2 teaspoon ground ginger
  • 1/4 cup raw cane sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder

Mix all of the above ingredients very well in a large bowl.

  • 1/2 cup coconut oil
  • 1/2 cup honey
  • 1/3 cup black strap molasses
  • 1 egg
  • 1 tsp vanilla
  • 2 tablespoons milk

Whisk all of the wet ingredients together and add to the bowl of dry. Let sit for 5-10 minutes to stiffen, stir again and then drop by large tablespoon fulls onto a greased cookie sheet. Bake for 10 minutes at 350.

Makes approximately 3 dozen cookies.

Ingredients
  • 1 cup roasted unsalted sunflower seeds

  • 1 tablespoon chia seeds
  • 1 teaspoon cinnamon
  • 1½ teaspoon ground ginger
  • ¼ cup raw cane sugar
  • ½ teaspoon salt
  • ½ teaspoon baking powder
  • ½ cup coconut oil
  • ½ cup honey
  • ⅓ cup black strap molasses
  • 1 egg
  • 1 tsp vanilla
  • 2 tablespoons milk

Instructions
  1. Put sunflowers seeds and rolled oats into a chopper and chop for a minute or so until you have a slightly course mixture.
  2. Mix all DRY ingredients in a large bowl.
  3. In a smaller bowl, whisk all the the WET ingredients together.
  4. Let sit for 5-10 minutes to stiffen.
  5. Stir again and then drop by large tablespoon fulls onto a greased cookie sheet.
  6. Bake for 10 minutes at 350.

Why did I chose those ingredients for my pregnancy recipe? Some of them I knew to be in the Bump Booster cookies that you can buy online (for an exorbitant price), others I added on my own.

Below I’ve tried to offer you a brief rundown of what each ingredient offers.

Sunflower Seeds: High calories ( energy), proteins, fatty acids, vitamin E, B-complex vitamins, folic acid, and mineral such as: Calcium, iron, manganese, zinc, magnesium, selenium, and copper.

Rolled Oats: Protein, calcium, iron, magnesium, phosphorus (strengthens teeth and bones), high fiber, blood sugar control.

Wheat Germ: If fresh ground, the whole wheat flour contains the germ as well. the germ is the powerhouse of nutrition for the entire seed, containing: good fats which help improve blood pressure, rich in fiber, high in B vitamins, and full of minerals such as Zinc, Phosphorus and Magnesium.

Flax Seeds: High calorie, high fiber, excellent source of Omega-3s, vitamin E, and B complex vitamins, and minerals such as: manganese, potassium, calcium, iron, magnesium, zinc and selenium.

Chia Seeds: High protein/calorie, omega-3 fatty acids, high in fiber, more calcium per serving than milk, high in iron and contains good levels of phosphorus, potassium, magnesium and zinc.

Black Strap Molasses: Very high in iron. Basically the entire reason I added it.

The other ingredients also offer great things, but those listed above are the ones I really wanted to add.  Keep in mind, these are great for pregnancy, but also for anytime you want a healthy snack.

One thing I really love about these cookies: I hear many complaints of constipation among pregnant women. I do not have that problem. Just eating 1-3 of these a day keeps me very regular. Something I am super thankful for and I will likely continue eating them after the baby is born.

A. for the protein that my body will need and B. to avoid the laxatives many women take so they don’t have to strain. (sorry if that was tmi)

And on a funny final note:

I offered a cookie to my sis who was munching and enjoying and then I showed her the pregnancy recipe card. Right across the top of it read this: Pregnancy Recipe Cookies. She laughed and said “well I hope they don’t make me pregnant… there would be a lot of explaining to do!” Made me chuckle. 😀
