Oat Flour Muffins ~Gluten Free Breakfast on the Go

Serves: 12
  • ½ c. Coconut Oil
  • 2 Eggs
  • ½ cup Maple Syrup
  • 2 cups oat flour
  • 1 cup rolled oats.
  • 1 tsp. salt
  • 2 tsp. baking powder
  • 1 tsp. cinnamon
  • 2 tablespoon ground flax.
  • 1 c. milk
  • 1 tsp. Pure Vanilla Extract
  • 1 c. raisins, dried cranberries, or nuts
  1. In a large bowl, cream together oil, eggs, maple syrup, and vanilla.
  2. In a separate bowl, mix together dry ingredients and add them to the creamed mixture.
  3. Stir in the milk and let it sit for a few minutes to thicken.
  4. Once batter is thickened, add in the fruit or nuts (if desired), and then pour into greased muffin tins.
  5. Bake at 350 for 25 minutes.
Note: I make my oat flour by putting rolled oats into my blender. Real oat flour may cause the recipe to do differently.

Store muffins in the refrigerator, they are best served warmed with a glass of milk, but are delicious cold as well!
