Mexican Roll-ups, A Beef Recipe

Serves: 8-10
  • 2½ cups of shredded beef (or 1½ pounds of hamburger, browned and drained)
  • 1½ cups of sour cream
  • 3 tsp taco seasoning
  • 2 cups of mushroom sauce
  • 1½ cups of shredded cheddar cheese.
  • 1 small onion chopped
  • ½ cup of salsa
  • ¼ cup of sliced olives
  • 10 flour tortillas
  • Shredded lettuce and chopped tomatoes (optional)
  1. In a bowl, combine the beef, ½ cup of the sour cream, 1½ teaspoons of the taco seasoning, 1 cup of mushroom sauce, 1 cup of cheese, the onion, salsa and olives.
  2. Mix well and spread approximately ⅓ cup of the filling on each tortilla.
  3. Roll tortillas up and place in a 9x13in glass baking pan.
  4. Mix remaining taco seasoning, mushroom sauce, and sour cream together.
  5. Spread this over the top of the tortillas.
  6. Cover and bake at 350 for 30 minutes.
  7. Uncover, sprinkle remaining cheese over the top and bake for 10 more minutes.
  8. Serve with optional tomatoes and lettuce.
