Cheesy Quinoa Broccoli Bake Recipe

  • 1½ cup of Quinoa
  • 1 Large Chicken Breast
  • 2 Tbs Coconut oil
  • 2 Cloves Garlic
  • 2 cups Broccoli
  • ½ a Bell Pepper
  • ½ Onion
  • 2 Large Eggs
  • 1 cup Milk
  • 1½ cup shredded Cheddar Cheese
  • 1 tsp of the Real Salt Seasoning Salt (or any brand that lists all ingredients to avoid msg)
  • 1½ tsp Salt
  • ½ tsp Black Pepper
  • Red Pepper flakes
  1. Rinse quinoa and cook according to package directions.
  2. Thinly slice and cut chicken into small pieces, fry in coconut oil until done. (If fixing a meatless Monday dish, skip this step and just saute the veggies)
  3. Chop up broccoli, onion, pepper, and mince garlic.
  4. Once chicken is fried, toss the veggies into with the meat and coconut oil and lightly saute.
  5. Whisk eggs and add milk, cheese, seasoning salt, salt and black pepper.
  6. Toss the cooked quinoa in with the meat and veggie mixture, then pour the egg mix in with the rest of the ingredients and mix well.
  7. Pour everything into a 9x13 pan and sprinkle the red pepper flakes on top.
