Who wants a recipe for healthy whole wheat lemon bars? I did!
Problem is, I couldn’t find one. I’m guessing it’s because lemons are so sour, that they need a good deal of sugar, and lots of sugar means not healthy. So look as I might, all I found were great and yummy sounding recipes that called for highly processed flours and sugars.
Drawing inspiration of off about 3 different recipes I made a batch. Meh… still to much sugar, and a little low on flavor, not to mention the crust was tough. Anyway, I won’t bore you will all the messy details, but a few cooking/baking days later, I ended up with something that deserves 5 stars! (according to Jason)
Not too sweet, not too tart, made with whole wheat flour, raw cane sugar, and fresh squeezed lemons, the perfect treat! In fact, I’m afraid it’s too good, Jason wants to take these in his lunches every day instead of the peanut butter energy bars I keep in the fridge for him!
