Meatloaf Wraps ~that is, Last Night’s Dinner

I made meatloaf the other day, and we ate it for two meals. No kids means a lot of leftovers for us. Then the remaining meatloaf sits in the fridge for three days, not enough for two people but more than enough for one.

Then, as I am making a fresh batch of tortillas, inspiration strikes!

Easy peasy, meatloaf wraps!

Meatloaf WrapsI put a tortilla in a pan with hot butter. Added a slice of cheese and some crumbled up meatloaf.  Fried it just like one would fry a quesadilla, folded it in half, flipped it, and voila! Meatloaf wraps!

The ketchup probably should’ve been put inside the wraps as it was pretty messy to eat this way, but they sure looked pretty.

They tasted very good, but I have no idea how to describe the taste to you. Any way, one easy dinner and I used up those leftovers!  Also, as a cook for preschoolers for over 3 years, I can almost guarantee that your kids will love this, good taste and not to strong.

    Can’t say I have ever had ketchup on a tortilla 😀 It sounds kinda like a weird combo, but I will take your word that it is yummy. I see you used cast iron ! 😉

      I love my cast iron skillet! And yes, it was an interesting combination, but really good. The ketchup should’ve been inside on the meat loaf though.

    What a great idea! I have a meatloaf on my recipe list coming up so we will have to try these the second night. Meatloaf is good…but not as good by itself the second time around. 🙂

    i have 3 kids & we always have left-overs, lol…my Mom taught me to cook for an army…. i like this new use for meatloaf 😉

      My hubby wasn’t to sure about it either, but he ate all of his and then part of mine, so I’m guessing he liked it!

    I love what you did with the meatloaf! And the ketchup on the outside does look super pretty! I don’t really do anything creative with leftovers, but I feel like now I should!
