Cereal is our go-to breakfast most mornings, but sometimes I like to fix this quick and simple breakfast casserole.
One of my favorite things about this breakfast casserole is that you make it the night before. It takes me about 20 minutes to make it, and then I toss it into the fridge. Next morning it goes in the oven and while I’m getting dressed, breakfast is baking. 🙂
Sadly this recipe calls for milk, cheese and onion, so it isn’t going to be seen on my table until I’m done nursing little K, or his tummy matures enough to digest dairy. However, I wanted to share my recipe so you could enjoy it for me. 😉
Quick and Simple Breakfast Casserole:
- 6 eggs
- 2 cups milk
- 2 slices of bread
- 1 teaspoon dry mustard
- 1 teaspoon salt
- 1 pound breakfast* sausage
- 1/2 medium onion chopped
- 1 cup shredded cheese
Brown sausage and onion together. Whisk eggs until they are frothy. Crumble bread.
Mix all the ingredients except the cheese together and pour into a greases 9″x13″ pan. Sprinkle the cheese on top and chill overnight.
The next morning preheat your oven to 350 and bake for 50 minutes. Allow to cool/set for 10 minutes after removing from the over.
*I season my own sausage because the seasonings in store bought breakfast sausage often makes me sick. The simplest recipe I use is 1/4 teaspoon each of real salt, pepper, and rubbed sage. My mom mixed a blend that she gave to the butcher shop when we last had a pig butchered. Her mix was awesome, and I plan on sharing it one of these days. 🙂
